Preheat oven to 400 degrees. Halve spaghetti squash lengthwise, then remove seeds. Place cut-side down on a lightly oiled @baking sheet{} and roast until tender, ~{35%minutes}.

While the squash roasts, halve, peel, and thin slice @red onion{2%unit}. Thin @scallions{4%unit}, keeping greens and whites separate. Combine or grate @garlic cloves{4%clove}.

Meanwhile, while the squash roasts, halve, peel, and thinly slice the red onion. Thinly slice the scallions, keeping greens and whites separate. Mince or grate the garlic. #pan { }?
Heat 1 tbsp @olive oil in a #medium pan{ } over medium heat. Add onion and cook, tossing until slightly caramelized, 6-7 minutes. Season with @salt{} and @black pepper{}. Slice?
Add @garlic{} and scallion whites to pan and cook 1 minute, until fragrant. Set aside in a #medium bowl{}.

In the same pan, heat another 1 tbsp @olive oil{} over medium heat. Add in @portobello mushrooms{4%unit}; cook 4-5 minutes per side, until very tender. Season with salt and pepper. Thinly slice and set aside.

Wipe out the pan with a @paper towel{}. Add @walnuts{} and a couple over medium heat, cook until toasted and fragrant, 2-3 minutes. Set aside in the bowl with the onions.

When the spaghetti squash is cooked and cool enough to handle, scrape the flesh with a fork into the bowl with the onions and walnuts. Toss with @parmesan cheese{} until well combined, then season generously with salt and pepper.

Serve the spaghetti squash topped with the sliced portobello steaks, crumble with @goat cheese{} and sprinkle with scallion greens. Enjoy!
